
Crunchy Baked Quinoa Chicken
A crispy baked quinoa chicken – so simple and healthy! Basil, Mozzarella, Olives… it smell like Italy.
What is your opinion about quinoa? I think that’s the thing for the cool kids right now and it’s healthy and easy to mix in your meal. So why deny it? I like it in my salad, to replace rice in Asian dishes and now as a breadcrumbs for my chicken.
Here is the step by step recipe:
1) Start with seasoning the chicken. Very simple, a litlle salt and pepper.
2) Mix italian spices with cooked quinoa. Add a little salt and pepper. Then pour the chicken in the flour, then in the egg and finally in the quinoa breadcrumbs.
You should get this nice breading around your chicken:
3) Cook the tomato sauce of your choice. I took a basil tomato sauce 🙂
4) Cut mozarella cheese into cubes and olives into slices.
5) Put all together: put chicken on a parchment-lined baking sheet. Coat each chicken with yummy tomato sauce, add the mozzarella cubes and sliced olives on top. Cook at 430° F (220° C) for about 20 minutes.
6) Meanwhile, you can cook linguine and coat with the remaining basil tomato sauce.
- 4 chicken breast
- Flour
- 2 eggs
- 180g cooked quinoa
- Tomato sauce of your choice (I chose basil)
- 150g mozzarella
- Black olives
- Italian spices
- Salt
- Pepper
- Linguines
- Fresh basil leaves to garnish (optional)
