A crispy baked quinoa chicken – so simple and healthy! Basil, Mozzarella, Olives… it smell like Italy.

4 chicken breast
Flour
2 eggs
180g cooked quinoa
Tomato sauce of your choice (I chose basil)
150g mozzarella
Black olives
Italian spices
Salt
Pepper
Linguines
Fresh basil leaves to garnish (optional)
Instructions
Start with seasoning the chicken. Very simple, a litlle salt and pepper.
Mix italian spices with cooked quinoa. Add a little salt and pepper. Then pour the chicken in the flour, then in the egg and finally in the quinoa breadcrumbs.
Cook the tomato sauce of your choice. I took a basil tomato sauce.
Cut mozarella cheese into cubes and olives into slices.
Put all together: put chicken on a parchment-lined baking sheet. Coat each chicken with yummy tomato sauce, add the mozzarella cubes and sliced olives on top. Cook at 430° F (220° C) for about 20 minutes.
Meanwhile, you can cook linguine and coat with the remaining basil tomato sauce.
