A crispy baked quinoa chicken – so simple and healthy! Basil, Mozzarella, Olives… it smell like Italy.

  • 4 chicken breast
  • Flour
  • 2 eggs
  • 180g cooked quinoa
  • Tomato sauce of your choice (I chose basil)
  • 150g mozzarella
  • Black olives
  • Italian spices
  • Salt
  • Pepper
  • Linguines
  • Fresh basil leaves to garnish (optional)
Instructions
  1. Start with seasoning the chicken. Very simple, a litlle salt and pepper.
  2. Mix italian spices with cooked quinoa. Add a little salt and pepper. Then pour the chicken in the flour, then in the egg and finally in the quinoa breadcrumbs.
  3. Cook the tomato sauce of your choice. I took a basil tomato sauce.
  4. Cut mozarella cheese into cubes and olives into slices.
  5. Put all together: put chicken on a parchment-lined baking sheet. Coat each chicken with yummy tomato sauce, add the mozzarella cubes and sliced olives on top. Cook at 430° F (220° C) for about 20 minutes.
  6. Meanwhile, you can cook linguine and coat with the remaining basil tomato sauce.
